Ingredients

  • 1 lb chicken breast- cut in to bite sized pieces 
  • 1 large onion finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger root, grated        
  • 2 tomatoes-diced
  • 1 cup plain Greek yogurt
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 cup coconut milk
  • 1 tbsp olive oil
  • fresh cilantro, chopped (for garnish)
  • salt, to taste

steps

  1. In a large pot, heat olive oil over medium heat.  Saute onions until golden brown
  2. Add minced garlic and gated ginger, cooking for another minute
  3. Stir in the curry powder, turmeric, cumin, and coriander, letting the spices release their aroma
  4. Add diced tomatoes and cook until they soften, allowing them to release their juices
  5. Add chicken pieces and coat them well with the spice mixture. cook until the chicken is no longer pink on the outside
  6. Reduce heat to low and stir in Greek  yogurt, ensuring it is well incorporated
  7. Pour in coconut milk and simmer gently, allowing the flavors to blend for around 15 minutes or until the chicken is cooked through.
  8. Sprinkle garam masala and season with salt to taste.
  9. Remove from heat and garnish with fresh cilantro before serving.
