Ingredients
- 1 lb chicken breast- cut in to bite sized pieces
- 1 large onion finely chopped
- 3 garlic cloves, minced
- 1-inch ginger root, grated
- 2 tomatoes-diced
- 1 cup plain Greek yogurt
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 cup coconut milk
- 1 tbsp olive oil
- fresh cilantro, chopped (for garnish)
- salt, to taste
steps
- In a large pot, heat olive oil over medium heat. Saute onions until golden brown
- Add minced garlic and gated ginger, cooking for another minute
- Stir in the curry powder, turmeric, cumin, and coriander, letting the spices release their aroma
- Add diced tomatoes and cook until they soften, allowing them to release their juices
- Add chicken pieces and coat them well with the spice mixture. cook until the chicken is no longer pink on the outside
- Reduce heat to low and stir in Greek yogurt, ensuring it is well incorporated
- Pour in coconut milk and simmer gently, allowing the flavors to blend for around 15 minutes or until the chicken is cooked through.
- Sprinkle garam masala and season with salt to taste.
- Remove from heat and garnish with fresh cilantro before serving.
