One-Pan Chicken and Rice

Ingredients

  • 1 tablespoon olive oil.
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup brown rice
  • 1 1/2 cups chicken broth

Instructions:


1. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook
until browned on all sides.

2. Stir in the onion, bell pepper, garlic, cumin, chili powder, salt, and pepper Cook until the vegetables are
softened, about 5 minutes.

3. Add the brown rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and
simmer for 20 minutes, or until the rice is cooked through.

4. Fluff with a fork and serve.
