Ingredients
1 pound boneless chicken breasts, cut into1- inch cubes
1/4 cup olive oil
1/4 cup lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instruction
In a large bowl, combine the chicken, olive oil, lemon juice, garlic, oregano, salt, and pepper. Mix well to coat the chicken.
Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
Preheat the grill to medium heat.
Thread the chicken on to skewers
Grill the chicken for 5-7 minutes per side, or until cooked through
Serve the chicken with pita bread, tzatziki, and grilled Vegetables.
Tips
For a more flavorful marinade, add 1/4 cup chopped red onion, 1/4 cup chopped green bell pepper, and 1/4 cup chopped fresh parsley.
If you don't have skewers, you can grill the chicken in a grill pan or on a baking sheet.
To make tzatziki, combine 1 cup Greek Yogurt, 1/4 cup cucumber, grated, 2 cloves garlic, minced, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix well
